Herbal Tea
Herbal tea — properly a tisane — contains no Camellia sinensis at all, only flowers, leaves, roots, bark or fruit, so all 43 blends here are naturally caffeine-free at 0 mg. They are brewed hard: a median 100 °C (212 °F) for 8 minutes, because there are no tea tannins to turn bitter.

Not tea, and that is the point
Nothing in this section comes from Camellia sinensis. Herbal infusions — tisanes, strictly — are made from flowers, leaves, roots, bark, seeds and fruit: chamomile, peppermint, rooibos, hibiscus, ginger, lemongrass, fennel. That single fact changes everything about how they behave in the pot, which is why they get their own hub rather than sitting inside a tea type.
All 43 blends here are caffeine-free at 0 mg, with one honest exception worth naming: yerba mate and guayusa are botanically caffeinated even though they are not tea. Where a blend contains them, the caffeine figure on its page says so.
How to brew herbal tea
Brew them hard. The median is 100 °C (212 °F) for 8 minutes at 3 g per 250 ml — water straight off the boil, and roughly three times the steeping time you would give a black tea. There are no tea tannins to over-extract, so the usual bitterness penalty does not exist; the failure mode of a herbal infusion is weakness, not harshness.
Different materials release at different speeds, which is why times on these pages range from four minutes to a quarter of an hour. Delicate flowers like chamomile and lavender give up their oils quickly. Roots, bark and dried berries — ginger, liquorice, rosehip, elderberry — need the long end, and traditionally get simmered rather than steeped. Keep the pot covered: the aromatic oils you want are volatile, and an open cup loses them into the room.
Choosing one
Because caffeine is not a constraint, herbal blends are usually chosen by what you want them to do: chamomile, valerian and lavender before bed; peppermint, fennel and ginger after a heavy meal; hibiscus and rosehip for a tart, cold-brewable summer cup; rooibos as the reliable all-day base that takes milk like a black tea.
