GABA Oolong represents a revolutionary processing innovation developed by Japanese researchers in 1987, later perfected by Taiwanese tea makers. The name derives from gamma-aminobutyric acid (GABA), a compound the process concentrates in the leaf. Through a unique oxygen-free fermentation process, this tea contains over 150mg of GABA per 100g - significantly higher than regular teas. Originally created as a technical experiment, it surprised everyone by also tasting exceptional.

The special processing involves alternating between nitrogen-rich and oxygen-rich environments during oxidation, triggering the tea plant's natural defense mechanisms to produce GABA. This anaerobic process, lasting 8-10 hours, fundamentally alters the tea's chemistry. The leaves undergo multiple vacuum and air exposure cycles before traditional oolong processing continues. This labor-intensive method increases production costs but creates a tea unlike any other oolong. Most GABA oolong uses high-quality base material from established cultivars.

The flavor profile is surprisingly delicious despite its medicinal origins: dominant fruity notes of ripe peach and apricot, with underlying umami richness unique to GABA teas. The texture is notably smooth and thick, coating the mouth pleasantly. Natural sweetness makes it instantly approachable, with no astringency or bitterness. Some detect brown sugar or caramel notes in darker roasted versions. The character in the cup is notably settled and unhurried, quite different from the bright lift of a lighter oolong.

Brewing recommendations: Use 1 heaping teaspoon (4g) per 250ml cup with water at 90°C (195°F), steeping for 2.5 minutes to extract GABA fully. For gongfu style, use 7g per 100ml, steeping 45-60 seconds initially. Can yield 5-6 infusions. Some prefer longer steeping to maximize GABA extraction. Excellent hot or cold-brewed overnight.
