Pu-erh Brewing Guide: Sheng vs Shou, Rinse and Times

Everything you know about steeping, inverted
Pu-erh breaks the rules the rest of this site sets out. It is the only category where the first pour is thrown away on purpose, the only one brewed in seconds rather than minutes at Western strength, and the only one that reliably gives you a dozen cups from a single measure of leaf.
The reason is microbial. Pu-erh from Yunnan is made from large-leaf assamica material, sun-dried into maocha, and then either compressed and left to change slowly over years (sheng, raw) or put through an accelerated wet-piling fermentation called wo dui (shou, ripe). Reviews of pu-erh processing describe how that fermentation restructures the polyphenols into the theabrownins responsible for the dark liquor and the smooth, low-astringency body — which is precisely why boiling water does not hurt it, and why a long steep turns it thick and muddy instead of merely strong.
The rinse is not optional
Every other tea in the database treats the rinse as a nicety. Pu-erh does not, for two reasons that have nothing to do with cleanliness:
- Compression. A pressed cake or tuo is a solid object. Ten seconds of hot water is what separates the leaves enough for the actual infusion to reach them.
- Storage. Pu-erh spends years in warehouses. The rinse takes the dust with it.
Use the same temperature you will brew at, count to ten, and pour it away. Tight cakes and aged sheng take two rinses of ten to fifteen seconds. Aged Sheng Pu-erh and Tuo Cha both carry a double rinse in the database for exactly this reason.
You will know the rinse worked because the second pour comes out fully coloured within a few seconds.
Sheng vs shou: two temperatures, two personalities
Sheng (raw) — 90 °C. Young sheng behaves like a very intense green tea: bitter up front, sweet on the return, apricot and smoke, sometimes a distinct bite. It carries the most caffeine in the category — 35 mg for Sheng Pu-erh, 45 mg for Lao Ban Zhang — and boiling water makes it aggressive. Ninety degrees, forty-five seconds.
Shou (ripe) — 100 °C. Fully fermented, dark, earthy, faintly sweet, with essentially no astringency to be scared of. It takes full boiling water and asks for it: Shou Pu-erh and Menghai 7572 both brew at 100 °C. Lower caffeine too, around 30 mg.
Aged sheng — 90 °C, and shorter. Decades of slow change move raw pu-erh towards ripe territory without ever getting there. It extracts fast: 30 seconds for the first infusion, not 45.
Gong Fu: where pu-erh belongs
Western brewing works, but it wastes the leaf. Pu-erh's whole argument is longevity, and longevity only shows up in a small vessel.
The pattern is always the same: three or four flash infusions at the same short time while the leaf is still giving freely, then a slow climb. Do not lengthen too early — if infusion four tastes as strong as infusion three, hold the time where it is.
Breaking a cake without breaking the leaf
Compressed pu-erh arrives as a bing (disc), tuo (nest), brick or mushroom. Do not snap pieces off with your hands — you will shatter the leaf and get a bitter, fast-extracting mess.
Use a pu-erh pick or a blunt knife. Slide it flat into the side of the cake, parallel to the leaves, and lever gently upward. You are separating layers, not cutting. Aim for pieces roughly the size of a coin, and take them from the edge inwards.
Troubleshooting
- Fishy or pondy: young ripe pu-erh that has not rested. Air the leaf in an open jar for a week; it usually clears.
- Bitter and thin: raw pu-erh at boiling. Drop to 90 °C.
- Thick and muddy: too long. Pu-erh timings are in seconds, not minutes.
- Nothing at all in the first cup: the rinse was too short, or the piece is too tightly compressed to open. Rinse again.

Frequently asked questions
Do you have to rinse pu-erh?
Yes, and unlike most teas it is not optional. Pu-erh is compressed and often aged for years, so the first pour has two jobs: it loosens the pressed leaf so water can reach the middle, and it washes off dust from storage and handling. Ten seconds for loose or ripe pu-erh, fifteen for a tight cake or an aged sheng — then pour it away.
What is the difference between sheng and shou pu-erh?
Sheng (raw) is sun-dried green leaf pressed and left to age slowly over years or decades; it brews at 90 °C and tastes bright, bitter and fruity when young. Shou (ripe) has been through an accelerated wet-piling fermentation since the 1970s; it brews at a full 100 °C and tastes earthy, sweet and smooth from the start.
How many infusions does pu-erh give?
More than any other tea. Ripe pu-erh runs twelve Gong Fu infusions from 6 g in 100 ml; a good aged sheng runs eighteen, and Lao Ban Zhang runs twenty starting at five seconds each. Western style, expect four to five cups from a single 3 g measure.
